Prep
Your Space: First, lay out about 2-3 feet of wax paper on the counter, and oil
it lightly. You’ll drop the cookies onto this later, so make sure it’s ready.
Mix
the Dry Stuff First: In a heavy saucepan, whisk together the sugar and cocoa
until they’re well blended. This helps the cocoa mix in nice and smooth.
Add
Milk and Butter: Next, add the whole milk and your stick of butter to the pan.
Turn the heat up to high and whisk constantly. Once the mixture comes to a full
boil, set a timer for exactly 1 minute and keep whisking the whole time. This
is the secret to getting the right texture.
Add
Peanut Butter and Oats: Once your minute is up, take the pan off the heat. Stir
in the peanut butter first, making sure it’s fully mixed in. Then add the
vanilla and the quick oats. Stir everything together with a tablespoon until
it’s all combined.
Drop
Your Cookies: Using a spoon, drop the mixture onto the oiled wax paper. Let
them cool and set, before enjoying them!
