Chicken and Spinach Pasta Bake

I took this recipe (http://www.savingmoneylivinglife.com/2010/06/chicken-spinach-pasta-bake.html) and made some changes..  I wanted to share the modified version, as it turned out really good.  It was so delicious!  Plus it made enough to feed all 4 of us for 2 meals.  It is really, really yummy! Try it!

Chicken & Spinach Pasta Bake

  • 12 oz cooked rotini (preferably whole wheat)
  • 1 T olive oil
  • 1 c chopped onion
  • 1 (10 oz) pack frozen spinach, thawed
  • 3 cups shredded rotisserie chicken
  • 1 (14 oz) can Italian-style diced tomatoes, undrained
  • 1 (8 oz) container Philadelphia chive & onion cream cheese (softened)
  • 8 leaves fresh basil, minced
  • ½ t salt, ½ t pepper
  • 1½ c shredded mozzarella cheese
Spread oil on bottom of 11×7 in baking dish.  Saute the onion in a small pan, then put into a large bowl.  To the bowl, add the rotini, spinach, chicken,  diced tomatoes, chive and onion cream cheese, basil, salt, and pepper.  Stir together well.  Spoon mixture into dish & sprinkle evenly with shredded mozzarella cheese.  Bake covered at 375 for 30 minutes; uncover & bake 15 more minutes or until bubbly.

Ravioli

Levi had ravioli for the first time the other day. He liked it a little too much. What a mess!

The window

A favorite pastime of the boys is to climb behind the couch, stand on the windowsill and beat on the window. They love watching everyone go by!

Summer Fun (part 1)

A photographer came out earlier in the summer to take some pictures of our housing complex.  I absolutely love these pics!  They represent our summer gardening and fun perfectly!









Lightning storm!

There is a lightning storm in the mountains tonight. It was really impressive to watch! I got out my camera and tried to capture a few pictures. Taking night pictures is VERY hard for me, but a few came out decent!

The entire sky over the mountains was lit up with lightning!
It was pitch black when I took this picture.  I love how the camera caught light and allowed me to see details far away!
The clouds look so angry in this picture!
I love the bolt of lightning in the middle and the sheets of rain off to the right.

Moose started preschool

Moose had his first day of preschool today. He loved it. He came home talking about Miss Debbie, the crackers he ate, singing a clean up song, and proudly showed us the worksheets he had done. I am so glad he liked school!
