Old Fashion Chocolate Peanut Butter Oatmeal No-Bake Cookies 🍪

 

1 stick REAL butter

2 cups sugar

3 tablespoons HERSHEY’S cocoa powder

1/4 cup whole milk

1 tablespoon vanilla extract

1/2 cup peanut butter

2 cups quick oats

 

Prep Your Space: First, lay out about 2-3 feet of wax paper on the counter, and oil it lightly. You’ll drop the cookies onto this later, so make sure it’s ready.

 

Mix the Dry Stuff First: In a heavy saucepan, whisk together the sugar and cocoa until they’re well blended. This helps the cocoa mix in nice and smooth.

 

Add Milk and Butter: Next, add the whole milk and your stick of butter to the pan. Turn the heat up to high and whisk constantly. Once the mixture comes to a full boil, set a timer for exactly 1 minute and keep whisking the whole time. This is the secret to getting the right texture.

 

Add Peanut Butter and Oats: Once your minute is up, take the pan off the heat. Stir in the peanut butter first, making sure it’s fully mixed in. Then add the vanilla and the quick oats. Stir everything together with a tablespoon until it’s all combined.

 

Drop Your Cookies: Using a spoon, drop the mixture onto the oiled wax paper. Let them cool and set, before enjoying them!

Peewee's Homemade Bread


 1 1/2 cups warm water

1 tablespoon honey

1 1/2 teaspoons salt

1 tablespoon dry yeast

1 teaspoon olive oil

4 cups bread flour

6 ice cubes


Combine the water, honey, salt, oil, and yeast in a bowl and let sit until bubbly (5-10 minutes).  Add in the flour slowly and mix until a dough forms.  Use bread hook to knead for 5-7 minutes.  The dough should not be sticky.  Add more flour or water if needed. 

Cover the dough and let rise for 1 hour.  Press with your fingers, if it springs back, leave it longer.  If the marks remain, it's ready.

Preheat the oven to 400 degrees.  Divide into two balls, then form into two loaves.  Place on a parchment lined baking tray.  Toss ice cubes into the oven, then quickly put in the bread.  Bake for about 20 minutes, until the loaves are golden brown. Cool on a rack.
