Easy Beef Stew

I made this the other night, and it was delicious.  It was also really easy, and as a bonus, Moose loved it.  All of this combined makes this a keeper of a recipe!

Easy Beef Stew

1lb beef stew meat
16 ounces of beef broth (or 1 large can)
1/2 tablespoon garlic seasoning
1 envelope onion soup mix
10 oz can cream of mushroom soup
2 medium potatoes, cubed
8 oz of carrots, cut up
1/2 cup of celery, chopped

Combine all the ingredients in a crock pot and cook on low for 8 hours. Very good served with French bread.

Moose's Menu: Chicken and Pea Salad


3 oz can canned chicken breast
1/2 tablespoon mayonnaise
2 tablespoons canned peas
pepper to taste

Combine the above and mix/mash thoroughly.  Serve at room temperature.  Would also be good on wheat bread.

Moose thought this was really yummy, and ate the entire thing at one sitting.  He can be such a little piggie at times! :)

Moose's Menu: Cinnamon Pumpkin

This is probably the simplest meal possible.  All you do is open a can of 100% pumpkin (I had some leftover from making THIS for us tonight), spoon into a bowl, top with cinnamon, stir.  I wasn't sure how Moose would react to it, but he absolutely loved it and kept yelling for more.  Plus he got a healthy dose of Vitamin A.  I'll have to get some more pumpkin for him! (No, he didn't actually eat the little pumpkin, it was just to illustrate to him what he was eating!)

Moose's Menu: Cinna-nana

One of Moose's favorite breakfasts also happens to be very simple.  Using a fork, mash up a banana in a bowl.  Sprinkle a few shakes of cinnamon on top and mix well.  Moose scarfs this right up!

Moose's Menu: Creamy Berry Oatmeal

This morning Moose had Creamy Berry Oatmeal for breakfast.  He likes all of his food, but he *really* liked this meal.  This was so simple, too!  The proportions are adjustable. If you like berries a lot, add more.  If you prefer it creamier, add more yogurt.  It's totally up to you!

Creamy Berry Oatmeal

Fresh raspberries
Vanilla yogurt
Oatmeal

Using a fork, mash up the raspberries.  Stir together with a couple of spoonfuls of vanilla yogurt.  Prepare a serving of oatmeal according to the package directions, then mix in the yogurt and berry blend.  Serve warm.

Moose's Menu: Chicken-n-Squash

Tonight I put together a quick meal for Moose.  I cooked a chicken tender on the stove and shredded it up.  I stirred the chicken in with some chopped green onion tops, a jar of Earth's Best Winter Squash, a tiny splash of olive oil, and some salt and pepper. You can judge for yourself what Moose thought of it!

Moose's Menu: Sausage and Cheese Tortellini

This is another meal that all three of us ate.  It was absolutely delicious!  It's a bonus that it is also super easy to make.  We will definitely be having this again in the near future!

Sausage and Cheese Tortellini


1/2 pound ground sausage, cooked
(2) 14 ounce cans diced Italian tomatoes, undrained
2 large fresh mushrooms
9 ounces of cheese tortellini, uncooked
1/2 cup shredded mozzarella

In crock pot, combine cooked sausage, tomatoes, and mushrooms.  Cook on low for 4-6 hours.  For last 30 minutes, stir in tortellini.  Top with mozzarella cheese for last 5 minutes until melted.

Moose's Menu: Beefy Noodles

I made this for our dinner last night, and saved a portion for Moose.  All I did was mash his up a little bit and he had no trouble at all eating it.  It filled him up pretty quickly, and he really enjoyed it.  Unfortunately, I didn't get a picture. But imagine it looking like Hamburger Helper, only homemade, and you will have a pretty good idea of what it looked like.  It was really yummy!

Beefy Noodles

1/2 large onion, chopped
1/2 Anaheim pepper, minced
Olive oil
1/2 lb ground beef, browned and drained
14 oz can stewed tomatoes, undrained
1 cup water
4 oz. wheat elbow macaroni, uncooked
Salt and pepper
Mozzarella cheese

Saute onions and Anaheim pepper in olive oil.  Add browned and drained ground beef, tomatoes, water, salt/pepper, and raw macaroni.  Cook for 15-20 minutes or until macaroni is tender.  Top with the Mozzarella cheese.

Moose's Menu: Green Rice

I made this Green Rice for Moose tonight.  I put the recipe together with the intention of making something healthy for him.  But after I tasted it, I realized it was also delicious!  I quickly made up another batch of it for Branden and I to have with dinner.  Give it a try, it's really good!


Green Rice

1 cup of brown rice
1/2 of a green bell pepper, chopped
3/4 cup of frozen spinach
1/2 cube of butter

Place brown rice, bell pepper, and frozen spinach in a rice cooker.  Add 2 1/2 cups of water (or amount your rice cooker calls for, plus 1/2 cup extra) and stir together.  Cook until done.  Melt the butter into the rice and stir together.  Serve immediately.  Serves 2.

Moose's Menu: Creamy Pear over Cheerios



Creamy Pear over Cheerios

1/2 pear
2-3 tablespoons of vanilla yogurt
1 tablespoon of baby oatmeal
Handful of Cheerios

Blend the pear, vanilla yogurt, and baby oatmeal until smooth.  Pour over the Cheerios and let sit a few minutes.  Enjoy! (Cheerios can be blended into the pear/yogurt mixture for younger babies that aren't ready for whole Cheerios.)

Moose's Menu: Deluxe Scrambled Eggs



Deluxe Scrambled Eggs

2 eggs
3 tablespoons milk
1 small piece of bacon
1/2 tablespoon finely chopped bell pepper
1/2 tablespoon finely chopped red onion

Cook the bacon in a small skillet until crisp, then dab well with a paper towel and set aside.  Saute the bell pepper and onions in the oil from the bacon.  Drain the oil well, leaving the bell pepper and onions in the skillet.  Beat the eggs and milk together in a small bowl with a fork.  Add the egg mixture to the skillet and scramble with the vegetables.  Crumble the bacon on top.  Serve with a small amount of ketchup if desired.

That little bell pepper grew in my garden!

Moose's Menu: Radish and Sweet Corn Oatmeal

Tonight Moose had Radish and Sweet Corn Oatmeal.  The sweet corn was locally grown (organically) here in Colorado.  Branden and I had it for dinner last night, and I saved a piece for Moose.  I cut his corn off the cob, of course.  The radishes were grown right here in my garden!  I took Moose down to help work in the garden, and brought a handful of radishes back.  I devoured most of them, but managed to restrain myself from eating all of them (they were really good!).  I blended the radishes and sweet corn together, and mixed them with baby oatmeal until it was a fairly thick consistency.  This dinner got the Moose seal of approval!
