Pumpkin carving time
The boys loved helped carving pumpkins this year. We had a great time. The evening ended with Levi sneaking off and climbing into the toilet. He was standing in there splashing away. Yuck! (Edited to add: Every night since Moose has wanted to light the pumpkins and then run out to look at them. He has been talking each day excitedly about how "we made a pumpkin patch!")

Sausage and Kale Soup (Zuppa Toscana)
- 1 lb. Italian sausage
- 3large russet baking potatoes , sliced in half, and then in 1/4 inch slices
- 1 large yellow onion , chopped
- 2 garlic cloves , minced
- 2-3 cups kale, chopped
- 16 oz. can chicken broth
- 1 quart water
- 1 c. heavy whipping cream
- Brown the sausage in a skillet over medium-high heat until no longer pink.
- Place cooked sausage, chicken broth, water, garlic, potatoes and onion in the slow cooker.
- Cover & cook on low for 4-5 hours until potatoes are cooked and soft.
- Turn the slow cooker off and add the kale.
- Return the lid and let sit for 5 minutes.
- Stir in whipping cream and serve.
