Pismo Beach- Oct 2009

We spent the weekend at Pismo Beach. The weather was beautiful! We ate tons of clam chowder, and walked for miles on the beach. It was a very relaxing time. Below are a few of the pictures we took.

Dex

We had to put Dex down last night. He was going downhill fast from what was very likely a tumor in his brain. He was still happy and lively, and very much Dex. We are all going to miss him a lot. He was a funny, sweet dog. We love you Dex. :( />

Wishon Camping Trip

Branden, Jazz, and I headed up to Wishon Lake to spend 3 nights. It was so beautiful up there! The lake is cool, clear, and gorgeous. We had a great time eating, hiking, swimming (Jazz anyway), and just relaxing. New office space

The Victim Services Unit (Rosalinda and myself) got moved into our new office this last week. We are downtown on G Street in an upstairs office. Branden came and helped us hang our curtains and put our fans together. We got our partitions put together earlier in the week. We each have our own space, which is nice. The only thing missing is our computers and network connection. Hopefully that will be up and running very soon. Our new space is very peaceful, and we already feel like we'll be able to get a lot more work done. I am hoping to have some pictures to share soon!

Shaver Lake camping trip!

Branden and I went camping this last weekend up at Shaver Lake! We had a blast, and cannot wait to go back again. The weather was beautiful, and our camp site was just perfect. We took Picker and Lucy along with us. We forgot one of our digital cameras, so all the pics were taken with a cell phone.

The new baby...Lucy!

Someone dropped off a little dog at the police department. She had a huge abscess. I brought her home to "doctor" her for the weekend, and we fell in love with her. Her name is Lucy, and she is Branden's little baby! He's going to be the one training her, and eventually doing agility with her. She's a wild little critter, and so cute!

Early Summer Shaver Lake Trip

Branden and I went up to Shaver Lake for the day today. We rented a little paddle boat (the one you peddle like a bike) and cruised around one of the coves. Then we spent some time enjoying the sun and just relaxing. It was gorgeous up there! We can't wait to go back!

Springtime Shrimp and Risotto

Springtime Shrimp and Risotto

Shrimp

1 pound raw shrimp, peeled and deveined
1 lemon
1/2 cup white wine
1/2 cup olive oil
3 garlic cloves, minced
1/2 cup of parsley, chopped
salt
pepper

Whisk together the lemon juice, wine, olive oil, garlic, salt, pepper and parsley. Add the shrimp and let marinate about 15 minutes. Grill the shrimp on a grill pan or directly on the grill.

Risotto

1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, finely chopped
1 ½ cup uncooked medium grain white rice
2 cups chicken broth
¼ cup sweetened evaporated milk
¾ cup white wine
1-2 cups chopped mixed asparagus and snap peas, blanched
¼ cup chopped parsley
Salt and ground black pepper to taste
Parmesan cheese

Heat oil in medium, nonstick saucepan over medium-high heat. Add onion; cook, stirring occasionally, for about 3 minutes or until onion is tender. Stir in garlic and cook until aroma is released (do not brown). Stir in rice; cook, stirring frequently, for 1 minute.

Stir in broth, evaporated milk, and white wine. Reduce heat to medium. Cook, stirring frequently, for 20 to 25 minutes or until rice is tender but firm to the bite (mixture will be creamy and more stirring will be needed as it becomes thicker). Remove from heat; stir in asparagus, snap peas and parsley. Season with salt and pepper.

Serve immediately topped with shrimp and parmesan cheese.

Dinner with Family!

Tonight Branden and I ran into Uncle Randy and Auntie Sherry at Save-Mart. They had a dessert planned and we had a main dish planned, so we decided to eat together. Auntie made delicious homemade strawberry shortcake. Branden grilled corn on the cob, and I made Springtime Shrimp and Risotto. It all turned out so good, and we had a lot of fun. Below is a pic of what I made. I will try to post the recipe in a separate post, as it's not working right now.

Monterey Bay trip

Branden and I went to Monterey Bay over the weekend. I took work off on Friday, and we headed for the coast! It was a quick trip, but very relaxing. It was cold, windy, sunny, and beautiful! We had a lot of fun visiting Monterey Bay Aquarium. Neither of us had been in a very long time, and it was neat to see all of the exhibits. Below are a few of the pics we took.

Branden's new baby

As most of you know, Branden is the proud new owner of a 1987 Chevrolet pickup. It's white and single cab. It's in remarkably good condition for being as old as it is. He's working on fixing it up. In fact, it is now midnight and he is over at the shed still working on it! It's a nice old truck, and fits him well. Here's a pic!

Good changes at work!

I am so excited with changes that are taking place at work, and I wanted to share. I was chosen to be the "Crime Prevention Officer", which is a newly created position with the Measure G tax money. In a nutshell I will be in charge of the following things: after school programs, in class programs, booths at Street Fair and Fiesta, career days, Neighborhood Watch, special community and school events, and all of the Victim Services stuff. I'll no longer be on patrol as of April 15!! I'll be working Monday through Friday, from 9am until 5pm. I am so excited and thankful for this new opportunity at work!! If I could have written a job description for myself, it would have been exactly what I'll be doing now. Woohoo!!
