This is an easy, quick dinner that is also really good! We have very little in the pantry at the moment, but I wanted to make something a bit different so I came up with this tonight. Yum!
Crunchy Fiesta Chicken
2 boneless, skinless chicken breasts
6-8 saltine crackers
Mrs. Dash Fiesta Lime seasoning
Salt
Olive Oil
Put the saltine crackers into a small baggie, seal it, and crush them into crumbs. Open the baggie and add a bunch of shakes of Mrs. Dash Fiesta Lime seasoning and a shake or two of salt. Close the baggie again and shake it all up then pour it on a small plate.
On another small plate pour enough olive oil to cover the bottom of the plate with a thin layer. Dip each side of the chicken breast into the oil, then immediately press each side into the cracker mixture. Coat it well with the cracker mixture then place in a greased baking dish. Repeat with the second chicken breast. Bake at 350 degrees for 30 minutes. Serves 2.
By the way, it took me twice as long to write this recipe up as it should have, because my husband was laying on the floor by my feet throwing one of Moose's balls up in the air over and over and over and over and....you get the point. Every so often the ball would make a detour and hit me in the foot or shin, so I would stop and threaten him with selling his TV AND phone to buy me a new computer if he broke mine with that ball. It didn't seem to impress him, and even as I write this he is STILL tossing that blasted ball up and down! Oh wait, it just rolled across the kitchen floor and I don't think he's going to go get it. Yay!

Gimmee five!
I taught Moose how to give me five today. It only took him about 15 seconds to learn how, and he's been doing it every time I ask all evening. In the video he is terribly concerned about the food on his bib. That kept bothering him through his whole dinner. He doesn't like to be dirty! Unless it's on his face...that doesn't seem to bother him in the slightest (as you can see in the video). Here he is giving me five!
Helping Mommy
Unloading the dishwasher this morning was more fun than it usually is. I had a tiny, smiling baby helping me! The original plan was for him to play in the living room while I worked in the kitchen, but he came crawling straight over to help his Mommy! He patted the dishwasher and had plenty of "words" of encouragement for me..."bah dah ahh ah". I am certain that he is the cutest little kitchen helper ever!

Presents for Moose
Moose got two presents today. It was a good day to be Moose! The first came in the mail from his Gramma and Grampa. They sent him brand new breathable blankies. These are bigger than his little baby blankets so that he can snuggle with them much better. He loves his blankies, and says thank you Gramma and Grampa!
His Daddy brought home three toy cars from work. Moose was already asleep when he got home, but woke up later in the evening for a little while. He had fun checking out his new cars with his Daddy!

Bottles
Moose looks so cute holding his bottle to drink out of it! He just melts us with his skinny little body and looks of concentration on his face. Cute, cute, cute!
You may have noticed that Moose is in only a diaper in many of the pictures. It's true, he runs around the apartment half naked most of the time. He seems to be very hot blooded (maybe like his Daddy?) and is most comfortable in very few clothes. I guess as he gets older he'll have to wear more clothes, but for now he's awfully cute in just his diapers!
Tonight we went to dinner at Ruby Tuesday. It was very good! It's a great place to take kids. We brought Moose's dinner along, but the waitress said it was fine to get food from the salad bar for him. He had some lima beans that I mashed up for him, boiled eggs, and garlic cheddar biscuits. He particularly loved the biscuits! He also tried some of my iced tea and a teeny bit of frosting off of the cupcakes. His eyes were huge with delight when he tried the frosting! Yummmmmy!
After dinner we went grocery shopping. Moose's Daddy was doing this weird snorting sound at him, and he thought it was just about the most hilarious thing he'd ever heard. His squeals of laughter were so precious! We got in the check out line and Moose was flirting with the cashier. He was giving her these sly little grins, and right in the middle of one of his biggest grins he spit up! Definitely not a way to impress the ladies, little man! His Daddy told him he's going to have to work with him a little bit on how to impress the ladies! :)

Tour of our place!
Moose helped me do a little tour of our apartment today. Several people had been asking for pictures or video, so I finally got around to doing it. Enjoy! (Click the youtube logo on the bottom right of the video and you can see it bigger)
The making of (lots of) baby food
I took on the challenge of making baby food again! This time I started at a slightly more reasonable hour. Around 9:30pm. It was quite a messy process again, but this time I made enough dinners for about 12 nights. They are all variations on turkey or beef with different combinations of squash, broccoli, bell pepper, spinach, carrots, sweet potatoes, and brown rice. Branden managed to fit all of them in our freezer. I am excited about having all those little homemade dinners ready for Moose! (He better like them!)

New tricycle!!
Moose got a tricycle from his Grandma Doris! It arrived in the doorstep on Saturday, but he had to wait until Saturday night for his Daddy to get home and put it together. By that time he was asleep, so he didn't see it for the first time until Sunday morning! He was in awe of his trike!
On Sunday evening we took him rolling around Fort Collins on his new trike. (I just have to say here that Fort Collins has to be the most gorgeous city I have ever been to...so much fun to explore!) He had a blast, and everyone we passed was smiling at him and commenting on his trike. It was really fun to go strolling with Moose on the trike! Thank you Grandma Doris for his awesome trike!!

Making messes
Every night I diligently tidy the whole apartment up, so that when we wake up everything is in its place. I love waking up to a clean, tidy, pretty home! Soon after Moose wakes up, he starts to undo all of that. We keep his toys in a pretty wicker basket by the TV. Once he is up and rolling around, I drag it to the middle of the floor, where he proceeds to scatter them about with much glee. It must rank near the top of his list for excitement in his day. You can see by the look on his face that it's serious business to unload toys, and at the same time so much fun!
Last night at 11:30pm I decided that it was a "perfect" time to try to make some food for Moose. I jumped onto the internet and looked at what a baby his age should eat and compared it to what I currently had. I proceeded to make a huge mess, and about halfway through I told Branden that it was so much easier to just open a jar of baby food than to do all this! I steamed carrots and squash, boiled eggs and noodles, and processed all of it in my ever so handy food processor!
I ended up with 4 meals. Saturday's brunch consisting of oatmeal and applesauce. Saturday's dinner consisting of noodles, tuna, squash, and carrots. Seasoned with the tiniest bit of salt and pepper. Sunday's brunch of squash, carrots, noodles, and I will probably mix a little yogurt in. Sunday's dinner of boiled egg and veggie blend, seasoned with a bit of salt and pepper.
Tuna and egg are brand new foods for Moose, and I was a curious what he would think of them. Particularly the tuna. That seems to be a food people either love or hate (I love it, his Daddy hates it!). I served it to him this morning with plenty of enthusiasm. I figured acting excited about it would improve the chances he would like it! I sang the "open your mouth wide, gotta get the food on the inside!" song (don't even ask!) and made the "yum yum yum" sound for him. I don't know if all that worked, or if my Mom is right when she said that he just likes everything because we've given him such a wide range of food. Regardless, he loved his tuna casserole, much to my relief!
That little boy is so precious to me! Just looking at that huge smile on his face melts my heart and makes me want to go snatch him up from his nap to snuggle with him! The only problem is, my sweet little boy is NOT a snuggler. He simply refuses to snuggle with me. He's gotta be on the move, things to do, ya know? Every now and then I try to snuggle him in and tell him "Lay like a dad-gum baby, why don't you?" He just laughs and squirms away.
To add insult to injury, the boy has learned how to say his first word. The sweet thing says "mama"...right? I mean after all I am home all day with him. Changing his diapers, feeding him, concocting recipes for him, playing with him, and tending to his every little need. Of course he'd say "Mama." No, of course not! He is constantly saying "Dada" and wanting his Daddy. The excitement on his face is precious when I say "Dada is coming soon!" He starts repeating "Da da da da", kicking his feet around, and pumping his tiny fists in the air! I guess I can't blame him, I get really excited when Branden is coming home, too! :)

Play instead of sleep!
Moose slept in this morning and woke up all pumped up to face the day. He hadn't watched TV at all since we got to Colorado. Mostly that was due to the fact I wasn't sure how to work the DVD without cable attached to it. It turned out to be really easy though. Moose was so excited to see his old friend, the Baby Einstein DVD, again! He wouldn't sit down and just watch it though. Oh no, he had to get up on his knees, hang on the entertainment center, and pound on it in excitement! It was so cute!
After lunch we went on a walk around the apartment complex and over to the pier on the lake. It started to sprinkle while we were over there, so we sat under the picnic shelter for a while. Apparently Moose was tuckered out from all his TV excitement and took a nap in the stroller (which is very rare). He was so cute snoozing away, reclined in his "wheels."
Tonight Moose had a very hard time going to sleep. He stayed up late enough to see his Daddy, and then we put him in his crib. He cried, so we brought him out again and his Daddy read him a story. Story time turned into playing with Daddy time! He was pleased as punch to be out having fun with the family! Sneaky little guy!

The Moosey baby says mmm-mmmm!
After dinner tonight we went to Penguin's for ice cream. They make delicious home made ice cream in all kinds of flavors. Both Branden and I got their Buttery Bliss ice cream which is pure heaven on a cone! Oh so good! It just didn't seem right to eat something so yummy right in front of Moose and not even give him a teeny bite! Yes, I know...babies shouldn't have sweets, babies shouldn't have dairy, and babies certainly shouldn't have ice cream! But who cares...he's our baby, and we decided that he should have ice cream. And he certainly was thrilled with his licks off Daddy's ice cream cone. He kept following it with his mouth wide open, wanting just a little bit more! It's an understatement to say that he loves Buttery Bliss ice cream!
Swim day
Today our friend Helen and her two boys, Michael and Brent, came over for hot dogs and swimming. Branden BBQ'd hot dogs down at the club house, and we all ate down there. Moose's Uncle Todd (who has a dual role being he is one of Brent and Michael's best friends) showed up in time to make Helen one of his yummy iced coffee drinks and swim with the boys! Moose had fun through lunch, but then he got a little cranky. He perked up when we got in the pool...for about 5 minutes. He had a bottle pool-side with Mommy, and then swam for a little longer before starting nonstop crying. His Daddy took him back to the apartment for a much needed nap, while the rest of us stayed at the pool. It was a perfect day for swimming, and it was so much fun to spend the afternoon with friends and family!
